The short answer
All three apps use your own Stripe account, so your payouts, disputes and Stripe Dashboard stay the same. They all support Tap to Pay on iPhone and Android, as well as Stripe card readers. The difference is in the features each app offers.
With AlfaPOS, you can take cash as well as cards, offset processing costs with Fee Saver and create staff roles with granular permissions. You can also organize sales by event, offer subscriptions and coupons, customize checkout, use kiosk mode and export sales reports. For flexible pricing, you can sell by weight or let customers choose a price.
AlfaPOS has the lowest app fee: 1% per sale, with no minimum. Payment for Stripe charges 1.2%, with a 15¢ minimum, and Collect for Stripe charges 1.3%. On a $20 card sale, fees total about 79¢ with AlfaPOS, 83¢ with Payment for Stripe and 85¢ with Collect for Stripe, including Stripe’s processing fee.

The $20 total is for a domestic card on a card reader: Stripe's 2.7% + 5¢ (the same in the US and Canada) plus each app's fee, at AlfaPOS's entry tier. Tap to Pay adds Stripe's per-authorization fee equally to all three. Payment for Stripe's 15¢ minimum is assumed to apply in your local currency.
